Maturing : Oak casks for the reds, enamelled vats for the rosés and whites.

Location : Domaine de la Vivonne is located on the slopes of the medieval village of Castellet, around the old buildings, the vines are planted on terraces (restanques).
Modernization works have been undertaken since its purchase in 2011 with a view to restoring one of the jewels of the Bandol vineyards.

The vineyard : we employ traditional growing methods at the Domaine de la Vivonne, the soil is ploughed into winter furrows in November. The grapes are harvested by hand. During the growing season, suckers are removed from the base of the vines and the bunches are thinned to leave only one bunch per branch.
No synthetic weed control products or fertilizers are used
